A-Maze-N Pellet Smoker cold smoke test run

The temp was 66-72 this afternoon, so I figured what the hell. I am gonna cold smoke some cheese with the new AMNP smoker. Her is how it all played out.

First lay out the cheese so you know where everything is and what it is.



Loaded up the first line of the AMNP Smoker with pellets. Packed loosely so the air could get around the pellets and have a even burn. Was told that this should be good for 2-3 hours of Smoke.



Got the pellets started and smoking with the torch.



Got good smoke rolling after about 30 seconds in the cabinet.



After 1 minute the cabinet was completely filled with smoke



After an hour and a half the pellets had only burned about an inch and a half down the rail



After three hours of smoking the pellets only burned about 3 inches down the rail. I had put the pellets out before I took the picture but you can see the burn line on the rail.



Here is the cheese after 3 hours of smoke. Do to lighting it is hard to really see just how much color the cheese took on.



Since I wanted to be able to show you just how much color the cheese took on. I waited until the cheese had cooled down and was vac sealed. Then I put one of the blocks of Mozzarella (On the right) next to some Mozzarella that I had smoked earlier in the year. (On the left)



Going to have to wait for 10-14 days before I can tell you what it tastes like. Actually it will be closer to a month. I like to let the cheese sit as long as possible.

Do I like the AMNP Smoker? Oh heck Yeah. After seeing the amount of smoke it produced and the ease of use. I see myself using it more and more.

looks like alot of smoke to me.  cheese last forever if you vac seal it?  your don't freeze it?  all good questions.   ???

Sparky it is good after a month... Better when aged longer.

I have had some over a year old in the fridge vac sealed and it was still good ;)

Never freeze it or it will become crumbly and ruin it :o

ty for the reply.  good info for those of us who don't know about smoking cheese.  i've got a amaze coming this week.  looking forward to using it.  now i have to talk the wife into a vacuum sealer.  hope costco has them.

Costco carries the foodsaver that I use. Good unit for the price. Had mine for a couple years with no problems.

When you finish the cheese let it cool in the fridge uncovered for a few hours before sealing. And wipe them down because they will sweat some as they cool.

I also like to wrap mine in some Saran wrap then vac seal ;)

I've had a sawdust maze for a couple years.
They really work, I've done good smoked ribs in my gas grill with it!

Muebe taught me how to smoke cheese too...Thanks Muebe...I made a cold smoker out of an old Coleman cooler. I added a smoke daddy to it and now use that...but the amaze-n-smoker works well in my Big Easy and electric smoker too. I have smoked everything, even eggs for Scotch eggs, herbs, spices , my smoked sugars and salts are wonderful on vegetables. I vaqcuum seal for a month then start tasting. He is right about keeping fvor months..it just gets better. I freeze a flat block of ice to keep temp down around 50º so there is no problem with melting cheese, I will melt it in my mouth. Looks good. That thing works pretty good. Looks like its real efficient. Might have to look into one.

I've been debating about getting one of these and have been looking for a good review.

For years I've always done the 3-4 charcoal briquettes with a chunk of wood (or pellet pouch) on top and it has always worked well. But I think this would be even better & easier.
