Title: Need slower cook

I love my pit barrel cooker, however, I believe that my ribs are cooking too fast. The average time is 3hr 45min. In my opinion, not enough fat has rendered and my ribs are a little too fatty. I trim as much as I can. Any suggestions would be appreciated.

I've nailed my ribs on the PBC and they take no more than 2.5 hours till they are done. I only do St. Louis cut, I prefer them over baby backs. I'm in south Florida, my vent is only open 1/4. I light my coals using lighter fluid, wait exactly 12 minutes, hang the meat and I don't check them again till about the 2 hour mark. Depending on the pullback from the bones, I may let them go another 15 minutes then sauce or I'll sauce at the two hour mark and leave em for 15 minutes. They are very tender and juicy. I don't like fall off the bone ribs, mine have a nice clean bite with a slight pull to them.

also some will put one rebar diagonally and plug the other two holes to lower the temp either by plugging with foil, corks or flexible magnets.

There was a time in my life I felt like you until I discovered high heat cooking. I gad been doing it for awhile and I got my PBC....it fell right in there with HH. I have tried 225 to 250 on the PBC a few times. You can get the temp down by putting foil around the rebar ,one at a time until you get the temp you want.I agree with Kona a 100 %.

Only fill up half your charcoal container and let your flap all the way down.  Open the screw and let the flap swing all the way down.  That's how I run mine.

with ribs that look like that you can't argue with the method that Kona uses.
