Kinda......it'd be hard to put a mayo based cold salad on the PBC and come out with something edible, lol.
I felt like dusting off the PBC so I bought a whole chaka khan the other day. I didn't know what I was going to do with it but the idea to make some chicken salad popped in my head.
I cut it in half and lubed it up with some olive earl and slapped some Mo Rockin' on it and slammed a hook in each half and have them gettin' their tan on in the PBC with a few chunks of cherry wood. We'll see how she turns out.
There will be pictures later I'm sure ;)
Stay tuned!

Thanks for the vote of confidence buddy!
Well, here's where we are at currently. It's made but it's gotta hang out in the fridge with the cool kids tonight and I'll be ready for it for tomorrow night's dinner.
I can at least show you how we got to where we are.
I took the cheekown off of the PBC at 160° in the breastages and brought it upstairs to take another glamour shot of it. I let it cool down while my wife was eating the skin off of it. Poor chicky.
I cut up some Gala apples, some celery, diced red onion, sliced red grapes and threw them all in a bowl with a little lemon juice, brown sugar, slivered almonds and chopped fresh tarragon and parsely. I added the white meat chicken that had a wonderful smoked taste but surprisingly not TOO strong as usual! Very nice! I added enough mayo to coat it well and seasoned with some salt and pepper. It will taste much better as it cools tonight and the flavors marry but the initial taste was pretty darn tasty!

Gonna be good on some nice multi grain toasted bread. I can't say that it's healthy but it's about as close as I get, lol!

Little curry powder is good too

Beautiful looking chicken and that salad is going to be awesome!

Not much on salads, but I would sure eat some of that.

I told you Jason, great looking cook!!
Do you use poultry shears to cut the chicken in half?
Anyone recommend them, any specific pair?
-
That one of the best chicken salads I have ever seen. Love all the stuff you put in. I might have to steal the recipe. bookedmark.

I used to have poultry shears but I thought that it made it too easy to cut chickens in half so I elected to hide them where I can never find them and instead use a short, small serrated knife to tackle the job. Works pretty good I guess considering I still have all my digits and the chicken did get cut in half.

Early dinner tonight. I was ready for it! I made myself a sandwich using the chicken salad and decided to add a little tomato, baby swiss and spring mix to the fold. I toasted up the Golden Flax & Grain bread and loaded it up with goodness. Cut in half and stacked and put a skewer through to hold it for its mugshot :P
I had a hot bowl of broccoli and cheddar soup with it along with some chips and a pickle. A Deli kinda dinner I guess!
