Wanted to try this again so with the leftover pork belly from Costco, so did another cure, this time for 9 days. Added a little more salt to the curing process and drizzled some honey on top right after removal from the PBC grates.  The smokey scent was really nice and so was the taste.  Last night made a BLT sandwich and it was deelish!  For slicing I used a serrated bread knife making it very easy to control the thickness of the slices.  If you haven't tried making bacon, I recommend it as it is easy and fun

Very nice looking bacon!  You do know that now I'm jonesing for a BLT too!!! :D

Looks great! We make our own charcuterie  at my work including bacon. We do a cure with Aleppo pepper and Szechuan peppercorns and smoke with pecan wood. Homemade bacon is way better than most of the store bought stuff. Nice job!
