My second time making this for myself and my coworkers and they were blown away. Some said it's the best sandwich they have ever had. You really can't beat PSB. As it was reheating in my crockpot at work I poured a little extra guinness into the pot :)

This was two 4 pounders so I added a lot more peppers this time around and used multi colored this time. Went easier on the jalapeno seeds as it was too hot for some the first round.

I did this yesterday and MAN was it good. I modified it a bit though. Instead of jalepeno's i used chili oil and instead of putting it in the oven i put it back in the pbc with only 1 rebar in diagonal for 3 hours. Either way it was goooooood. One thing i would say, use more peppers then you think because they vanish.

I made Pepper Stout Beef for our Christmas party on the PBC. Second time I made it, and it disappeared quickly.
PBC ready for the hot coals with a few chunks of apple wood:

Prime pot roast all salt and peppered:

After 3-4 hours hanging in the PBC. I was out and it got up to 180*

All set in the the pan with peppers, onions, stout, and Worcestershire sauce:

looks like you nailed it. I'm due to make some soon. I found that I like to add more peppers than what the recipe I follow calls for. I add all 4 colors of bell peppers. The last time I cut back on the jalapeno seeds and some actually preferred when it was much more spicy from when I left all 3 jalapenos / seeds intact. They called it an "adventure" lol.

I used sriracha instead of JalepeƱos. And I doubled the onion.

as always nice cook kona!!!!
just curious, has anyone tried it with a different type of cheese that they recommend? ive done it with provolone, buffalo mozzarella, and pepperjack. i actually liked it with the buffalo mozzarella the best.
also, instead of stout i tried with deschuttes black butte porter and that was delicious...isn't it fun to experiment with beer!!
