Couple of hunks of shoulder

Using Tee's method. Injected with apple juice, soy sauce, and some FSB. Applied a liberal coat of FSB, and vac sealed for two days.

Lighting 16 coals for the snake method. Cuz 17 would be overkill. Couple hunks of apple and cherry.

Burp. Really needed a sammie before posting. This came out pretty good. Quite moist. Good flavor and smoke. Didn't flake apart as easy as I expected. I pulled at 200 IT.  Foiled at 170 IT. Maybe I should foiled earlier.....

But did not test it before pulling. Need to remember to do that next time.





Son wanted some wingies.......and I still had some life in the charcoal.



Beautiful day in Minnesota for cooking outside. 55 degrees, sunny and bright blue sky. Doesn't get much better then that.
