I smoked some chicken in the PBC, pulled it and made enchiladas. I've never made enchiladas before but these turned out great! I finished them in my weber kettle but I think I could have finished them in the PBC on the grate. Sometimes I forget about the cooking grate. .... :D

Nope, chef's snack.....and it was good. I typically go with Plowboys Yardbird rub for chicken.

I would throw in another word of praise - but they all seem taken. I love a good enchilada - unlike The Smoke I have had plenty of bad ones (I live in Minnesota... ??? ) These look excellent and I am going to do my best to rip them off!

I have had bad ones, but those were the ones I made :D so I aint talking about it ;D ;D

I would throw in another word of praise - but they all seem taken. I love a good enchilada - unlike The Smoke I have had plenty of bad ones (I live in Minnesota... ??? ) These look excellent and I am going to do my best to rip them off!

They do look good! My first cook in the PBC last week was a chicken and after a meal with black beans and yellow rice there was enough chicken leftover to make enchiladas too. My wife loved them with the smoked chicken.
What sauce do you use? Do you dip the tortillas before stuffing them? I grow my own hot chilis (8-9 varieties at the present time) and in go a few for flavor. I also stuff some Quesadilla cheese inside... Mmm my mouth is watering now...

Thanks! Unfortunately I can't remember the brand of the sauce. It was a store bought sauce but not a common brand I've heard of before. Yes, I dipped the tortillas before stuffing them. I put a tiny bit of cheese inside but next time I'm putting more!

No problem. They are dipped in the enchilada sauce. Just kinda coats them. I think it helps keep the tortillas from getting hard when cooking. I've just seen enchiladas being made on TV and they dipped them so that's what I did....lol.
