will be making this for the first time today. I couldn't find a 4lb chuck roast so I have a couple 2lb cuts. They've been resting overnight with kosher salt and heavy black pepper. Will smoke them till 165 and into the pan and oven to finish. Will be adding Green and Red Bell Pepper, Jalapenos, Garlic, Red Onion, Worcestershire and of course Guinness. I have some hoagie rolls and provolone cheese and some horseradish spread to finish :)

man my coworkers went NUTS over this! It went fast and everyone said it was outstanding. I will say, I think by it sitting overnight, the heat cranked up a little bit in the beef lol. It was definitely a bit more spicy than yesterday

It is well worth the time and everyone I fed it to was blown away! I smoked the beef till 165* internal temp, then into the pan and into the oven at 350* for 3 hours. This is the exact recipe I followed. If you like it hot, leave the seeds in the jalapenos, it was too hot for some I gave it to.
