Holy Smoked Turkey!  The PBC nails it again.  Just a little salt, pepper, rosemary, thyme, sage and a little cornstarch to make the skin crispy.  4.5 hours on Kingsford Applewood and it was perfect!  Happy 4th everyone!

Lost one rack off the hook right after saucing.  Overcooked a bit and the bones let loose on one side and the rack fell into the coals.  I was outside and heard it so I was able to rescue them before the sauce charred. Whew!  I cooked them for 3 1/2 hours before I checked them.  Next time I will check them earlier.  Still pretty dang good.   :)

With all due respect, and I do not mean to insult Amber or Noah, but this is the most brainless cooking device ever created.  This thing is amazing.  Simply select a meat or fish, season it with their rub, put it on the PBC and go take a nap for a couple of hours. When you wake up your dreams will have come true.  Thanks Amber and Noah!  You deserve a great day of Independence!..

Ribs on Saturday that my father in law said were outstanding and the best he ever had. Then told me I was on rib, brisket and turkey duty from now on. Got home and threw a pork butt that's cooking now for lunch for the rest of the week
