So how did they all come out? How much pull was needed to clean the rib bone nicely?
I want to do eight at a time of baby backs, but I'm having a tough time getting them evenly cooked when trying two racks with the thick end up. The lower end is crispy, the mid and upper are just ok. I've played only a little with longer times, but am afraid to loose them in the bottom of the barrel.
So obviously, more practice is in order!
