Thanks for the tip on the chimney. I sent the question on that topic out several times because I was getting different answers, I guess their support is from the OONI forum/community or outside sources but not from OONI the company. My last email for support questioned the two manuals I have. There are instructions addressing the gas burner and the the unit using wood, as well as the accompanying photos differ from one another. About the only agreement was to leave the door off. if using gas. Otherwise, one booklet said no chimney and use the cap and the other booklet said use the chimney. I asked for a final answer from the company and was told chimney on for all cooks and for gas, damper open. Door on for wood (not sure why) and off for gas, which I reckon if you don't want a burnt pizza you need to keep an eye on it. But not sure why you leave the door on when using wood; temp not as high? Time and trials will tell.So I will putter around and experiment once the weather warms up and my work and other obligation slows down. Thanks for the link. I will check it out.
