Got the smoke going (trying CharBroil's Whiskey Wood Chips at my wife's request), then dropped the basket in on high for about 15 minutes, then down to low. The second pic is about an hour and 15 minutes in...

Now....questions.
1. I'm doing two of these, one a bit bigger than the other. I put the larger one on top figuring higher temps, so the cook time would even out a bit. Is that proper logic?
2. Should I be pulling the basket out to check temp on the bottom butt, or can I trust the top as a guide? I was thinking that pulling it out, and putting it back any time I check the temp would just prolong the process...

Top one will finish first because it is up in the hottest part so yes you are correct for putting the largest one in top. There is 15 to 20 min difference in time
I learned a long time ago to place the largest ones on top Now if you will place your temp probe in the lower but and when it hits 190 the top but is done and very close to the 205 IT that is where I take mine before I pull them to foil and wrap

Unfortunately, i just have an instant read thermometer, I need to get one I can just leave in.
The top Butt was reading 198-210 depending on where I stuck it, so I pulled it, wrapped it in foil, and stuck it in a thermal bag.
The bottom butt was only reading 175-180, so I moved it up to the top shelf position to finish it up.

Yep that's how it goes in Infrared. Give the bottom one about 20 mins then it's done. Now foil for about 2 hrs then your ready. Add apple juice when you pull it apart for more flavor

I gotta say, I'm pretty darn happy with the results. I'm liking this SRG more and more every time I use it.
With all the info and assistance available here, I don't see how it could have failed. They tried to fall apart just lifting them out of the basket. Bones pulled out clean. Nice crunchy bark.
I just used a little NC vinegar-based sauce (easy recipe from the interwebs). I was happy, my girls were happy, and I'll be subjecting the in-laws to some for dinner tomorrow. :)
