Some chicken legs and a large container of "Super Pig Bacon Rub" from Savor Spices...

Legs were liberally coated over and under the skin. Then hung with care in the Big Easy basket using leg racks and the bunk bed rack...

And in they went for about 1 hour...

Now this was kind of an experiment because the Super Pig Rub has a very high sugar content and the infrared energy produced by the Big Easy is known for scorching sugar. I was pleasantly surprised that there was some beautiful brown color but no real burning.
The taste was just fantastic! Spicy and sweet!

Thanks for all the compliments.
Just a note I did not use the mesh lid until the last 15 minutes of cooking so maybe that helped with them not burning.
