This is something I decided to give a shot. I beat the heck out of skinless boneless chk breast to get it flattened out. Sautéed some garlic, shrooms and spinach. Put the mixture into the breast, rolled and covered with bacon. These took about 30 minutes and were pretty tasty!
The last picture i had to post, a little ironic it hought. As i am cooking the chicken, the ladies decided to come up to the porch to see what was gong on.....

Great looking cook. It's hard to beat chicken stuffed and wrapped in bacon and cooked in the SRG.
The girls are coming to pay their last respects.

I love stuffing chicken breast and wrapping in bacon.....then again i think i'd love anything wrapped in bacon ;D

Did a very similar cook but stuffed with an Ortega Green Chili (very mild but tasty) and some mozerella cheese. Did the bacon wrap and mmmmmm good. She's allergic to garlic but might have to try the spinach thing.

I guess the chickens wanted to know what was down the road for them.
