North Carolina Whole Hog

I am a fan of Mark Wiens videos, and ran across this one about North Carolina Whole Hog.  Have seen other videos about BBQ joints  but I enjoyed this one.

  Well, now you have me wanting to cook a hog, and it's the wrong time of year.  So I think I'll start planning for fall.  I like the long method and adding crisp skin into the mix sounds good too.

Here are a couple of other Carolina places that Mark Wiens visited.  I sure wish I lived closer.  I would like to see what other local residents think of these places?

Terry, do you still use the China box that you have?  maybe a different kind of box to cook a whole hog.

We cooked a whole pig in Terry's "Cajun Microwave" about 4 or 5 years ago at the cookout at Backyard Jack's. I remember that Albert and Jaxon each ate an eyeball while the rest of us ate the best pork. That La Caja China does an excellent job. I have a video of this event. I'll see if I can dig it up and post it.
