Thighs
« Reply #-1 on: May 23, 2013, 01:45:06 AM »
Well the internet has been messed p at the house for a couple days so I am catching up with some posts.

Here are some thighs I did the other night. I brined them over night, used the new mayo trick and put a little bit of rub on them. Put them into the SRG, pulled at 175. WOW, these were AMAZING, mama told me we will be having these again this weekend, and we wil be making more than 4 of them.

I can see why she wants a repeat.  For those who don't know, would you explain the mayo?  Dee

For those that have not tried Mayo, it is now a must at my house! After I take the chicken out of the brine and rinse then wrap them in paper towel to ensure they are dry. Once they are completly dry I use a little bit of mayo all over the skin, making sure it is covered with just a thin coat. Not only does it help the rub stick, but it provides a really nice color and crisp to the skin. I find that the oils in the mayo will make it crisp better than useing strait olive oil. Dont relly have a good reason as to why, but who cares why, it works and is delish!!

Great color on those thighs. I'm gonna give that mayo trick a try next time I cook some chicken.

On which temperature did you run the SRG?
