I use this yummy Instant Pot pinto beans recipe as a side dish and/or a bean soup
Used the quick soak method for the beans. Brought the beans to a hard boil for 3 minutes before covering the beans and allowing them to sit 2 to 5 hours depending on your time frame. Drain and rinse the beans before pressure cooking.
Combined pinto beans, ham, chicken broth, celery, onion, stewed tomatoes, garlic, chili powder, pepper, seasoned salt, and cayenne pepper. Pressure cooked for 60 minutes. Allow the pressure to release naturally for 15 minutes before quickly releasing any remaining pressure.
Ingredients: 2 cups dry pinto beans, 4 cups chicken stock/broth, 5 stalks celery chopped, medium red onion diced, 3 cups diced smoked ham, 1 can Italian stewed tomatoes, 2 teaspoons crushed garlic, 1 teaspoon chili powder, ½ teaspoon black pepper, ½ teaspoon seasoned salt, ½ teaspoon cayenne pepper (optional)
