Last week a friend of mine mentioned that his wife had made Hoppin' John for dinner.
That got me thinking.
Hoppin' John is something I haven't had forever.

So I just had to have some.
I got out the Power pressure cooker, and...

My version, served with collards, corn bread, & tomato from my garden.


I used the leftover veggies from last weeks pork belly cook in the peas. Perfect!
Well, the peas could have had a bit more bacon, but what couldn't?
Waste not, want not.  ;)

It is made with black eyed peas, long grain white rice, bacon (or pork of some persuasion), onion, bell peppers, celery, & spices (preferably Cajun seasoning).

did you do the collards in the PC too?  I do and they go about 26 minutes per batch and are wonderful, just sayin.   .☆´¯`•.¸¸. ི♥ྀ.

Looks AWESOME!!  We just bought an Instant Pot and I have been wanting to do black eye peas and ham.  Could you provide some info on cooking in the pressure cooker?  Time/(low or high) - manual or some other setting?

Pam, I did my collards on the stove top. I didn't think about using the PC. Should have.  ::)

As for the time, My PC has a lentil setting (I'm sure it is high) & I cooked them for fifteen minutes with auto release.
They were soft but not mushy.

Fine looking meal! We love everything on that plate.  Your tomato is excellent!  Mine have backed off now but I hope to bring them around one more time between now and cold. Which may be Christmas here.
