Title: A perfect cook on a fall day.
Post by: AndyL on October 26, 2019, 05:43:15 PM
I cooked some simple, yet delicious chicken thighs and bone in country style spareribs today. Everything came out moist and very tasty. A quick cook, 1 1/2 to 2 hours. I used a different lighting technique this time and did not run into the doubled cooking times I experienced last time. 20 minutes in the chimney starter, coals in the center of the basket (idea I saw on YouTube) and I let them burn for 20 minutes before I put the food on. Didn't think I'd fit all my food on the grate, hahaha! Couldn't have gone any better, still loving my PBC!(https://uploads.tapatalk-cdn.com/20191026/224555e72b5bed6ac89713040c37c742.jpg)(https://uploads.tapatalk-cdn.com/20191026/dc6983256224e0e5be89c8096b01af31.jpg)(https://uploads.tapatalk-cdn.com/20191026/1ec1ca16b68c112f17c0ccf87e1b7501.jpg)

A very good looking cook!

That's not a typical cut I've seen around here.  It looks like they're essentially chops cut from the front end of the back rib/loin section extending into the shoulder.   A lot of nice meat on them!

Thanks everyone,  I appreciate the kind words!

Yep pretty much what they were, thick cut pork chops very reasonably priced with a nice little layer of fat on them for flavor.

Beautiful looking chops! Could you point me to that youtube vídeo you mention, I'm curious about the gizmo in the middle of your charcoal basket! Thanks from sunny Portugal!

Hey! Here's the link to that video:

It's a you tube channel called "Cooking with Ry" I've found it pretty useful for my needs. Yeah, I definitely like the charcoal gadget, it centers the initial chimney of coals right in the center of the basket. Which, in my experience provides a more even and complete burn. Hope this helps!

I do basically the same thing with WSM.  Got the idea from Sparky.
