Chicken Pieces On The PBC ?
« Reply #-1 on: June 07, 2020, 05:49:07 AM »
What is your process for cooking chicken pieces on the PBC ? Both steel bars installed ?  , lid on the entire time ? Any PBC cooking deviations that work for you ?
Ideally want tender chicken pieces , good BBQ taste and crisp skin ... Thanks in advance !

Use the cooking grate

keep out the re-bar

keep the lid slightly cracked to crank up the heat for crispy skin

eat and enjoy

I spatchcock my chickens on the grate with rebars out. You may need some prep work on the chicken for crispy skin. Some like to use baking powder or cornstarch in their rub and leaving the chicken out in the fridge to dry out the moisture in the skin a bit.

Good comments - taking out the rebar bars helped ; cracking the lid helped further . Next , I'll research adding corn starch / baking powder  to the rub along with air drying in the fridge to crisp up the skin further .
