Title: Bacon Wrapped Scallops
Post by: zueth on February 05, 2018, 03:40:46 PM
I took out 2 dozen scallops from the freezer, let them defrost and put them in a marinade of olive oil and Pike Place seafood seasoning, probably about 1/4 olive oil and 1 1/2 TBL seasoning.  I let them sit in the marinade in the fridge for 1 hour, while they where marinading I set smoker for 210.  After the hour I removed from marinade and wrapped them with 1/2 piece of thin cut bacon and put a toothpick through it.  Then I put them in the smoker at 210 with alder smoke for 1 hour.  I pulled them and put them in a preheated oven at 425 for about 3 minutes to crisp the bacon a little bit.  They turned out very good and will make again, but I think I will smoke at 200 next time.

Very nice!

We've done the same thing with shrimp and they are good.
