So, like usual, I'm debating how I will place the birds in the cage. My last "whole bird" cook, I hung it from the legs, supported by the bottom basket. Thinking was...let them dark meat juices run into the white meat.
As I spatchcocked these birds, I have two options.
1. Hang them opposite each other with skin side outward
2. Lay them flat, one over the other.
Suggestions?
