I have something for you to try with your pork burnt ends. A few years back I smoked some pork burnt ends using a cherry rub. When I finished smoking them, I put them in a half pan and placed them in the fridge overnight. The next day I took a dark chocolate and dipped each cold piece of pork in it and sprinkled some more cherry rub on top of the chocolate. The only person who didn't care for it was my wife. As I recall, Tee and Mrs. Tee loved it. TMR and Kimmie also loved it. In fact Kimmie wanted to know when I was making some more. Hub liked it, too. I also received rave reviews from a number of students at Johnson and Wales in Charlotte.
Everyone who took a piece was expecting chocolate candy. Then they bit into the pork. Surprise!! Surprise!! This was another version of bacon dipped in dark chocolate. Time consuming, yes. One of these days I will have to make another batch.
