Finished product is resting. Almost 4hrs on low.. Lid down first 1.5 to keep the smoke it. Can't wait to cut into this!

My Big Easy is my favorite turkey cooker. I have never tried to do any smoking in it, since it cooks so fast (about 10 minutes a pound if I remember correctly). Here is this year's feast!

Glad to see some of you guys are still around. Miss the posts.

We're on the mainland for the weekend but going home Tuesday. If any of you happen to be in Kailua in about a week, stop by for belated turkey, dressing, and gravy. Might be some other stuff, too, but that's up to SWMBO.

I'm so glad to see the SRG's still being used...I still have mine and love it, and use smoke every time. I use cherry wood because it gets the darkest .  Happy Turkey Day to all. Pammie

One question on the smoking in TBE, do you just put the wood chunks in the bottom? It wood easily fit under the "Tommy Ring", but with the cook so quick (about 10 minutes per pound if I remember correctly) the cook is usually under 2 hours. Is that enough time to get any flavor to the bird?
