Title: Smoked Salmon on Big Chief

I was given a spring king salmon to smoke, I used a brown sugar/ salt brine.  After a few hours of alder smoke I glazed with honey and added pepper

Nice fish and very nice smoke. I think too many people reach for cedar - I really like alder for fish. Nice cook!
