Title: Ok guys, talk me off of the ledge here! - Too Late :P
Post by: RG on September 12, 2016, 02:02:42 PM
I once not long ago was looking at muebe's posts of his uuni pizzas and I shrugged it off. Well, idle hands and all of that........it's been on my brain! Keep in mind I just dropped some serious scratch on that dang blasted KBQ. The wife still ticked off at that I am sure ( Steph, if you are you reading this don't feel obligated to reply :P )

I know the Uuni is a far cry from $1500.00 but still, she never likes it when I buy new cookers! NEVER! Even though she loves the food off of them (KBQ is winning her over).

My main question is this - Do you any you that have the Uuni and also have or had a Kamado think that the Uuni makes better pies than that made on a Kamado? Steph and I can make pretty mean pizzas on our kegs but it takes a LONG time for the keg to come up to temp with the plate setter in there and also burn clean. We like to let the Keg burn for at least an hour to get the stone nice and hot AND to burn off any bad smoke that may impart a bad taste into the pizza. Some people like a smokey pizza, I'm not looking for that flavor. I like wood fired pizzas but not a smoked out one, lol.

If the Uuni makes a superior product, I think I would like it as it comes up to temp SO fast.

So, either talk me off the ledge here or talk me into it. All opinions are welcomed!

I don't have a keg but I have the original Uuni and have eaten from the Uuni II at one of the Fall gatherings..It heats up and gets so hot..pizzas are done in minutes,,,and are fabulous..can make bunches of them, just have them ready.  I have a metal pizza peel with a handle that fits right into it for placing and pulling pizzas. just sayin.     .☆´¯`•.¸¸. ི♥ྀ.

Thanks Pam for that answer! If someone has made/eaten pizza from a Kamado (Keg, Egg, Kamado Joe, Vision, Akorn, Primo, whatever!) and a Uuni, that's the comparison I'd like to hear. It may be that such a user does not exist and it's up to ME to do the hard work, lol :P

I am willing to take one for the team!

Sorry I have never had a pizza from a Kamado so I can't be of much help. But just some quick advice is that the Uuni is really best for thin or close to thin crust pizzas because it cooks from the top and bottom. Otherwise by the time the thick crust is cooked the top of the pizza will be literally charcoal. There is flame traveling just above the top of the pizza. You can par bake the crust for a few without toppings and then add toppings and cook more.

I did get the new baking stone for it and it worked well.

If you like to make thick crust or deep dish pizzas then the Uuni might not be what you want.

Thanks Mike, I hoped you'd chime in. I do love a thinner pizza as well as thicker ones and pan pizzas. My new thing I like is Neapolitan style. Simple yet delicious! I am still looking into the Uuni, more research is needed for me to pull the trigger.

The Uuni is the closest thing I have had to the taste of a real wood fired pizza from a wood fired pizza oven. I can tell you that for sure.

Muebe is right, had some pizza from a Uuni at the GA cookout and it was wonderful.   Had just the right amount of smoke flavor and the pizzas cook very fast.

Would love to buy one but right now there is no way  :( :(

Once you have had REAL Napoli style pizza...I can't  be happy with gas cooked. Just offering my opinion here... UUNI....YOU will be amazed att eh portability and simplicity. It is the only real solution for guys that like to pack light - and go deep into he woods or off grid and be able to have a quality pizza, or a Pittsburgh seared steak at a primitive campsite.
And- it is just as adept at staying at home. It is all stainless exterior - and just plain fun to operate.

I must say I have had great, Great, great pizza in NY city from a gas oven That being said I love the coal fired pizza from CT. I would say it is a tie in my book. I have had very good pizza that is wood fired  so I guess I say there can be great pizza made all ways.

For me - there is a distinct flavor and aroma difference in gas fired vs charcoal or wood.  One is only about the pizza itself, and the other is about the pizza + the added "old world", tradition and outdoor cooked flavors.

And - like you, I can enjoy both. But, having handled the various gas units, eating some great pizza from them  and owning an UUNI...I love the flavor and aroma of the UUNI pizza, not to mention the simplicity, speed, and lightweight of the UUNI. You just can't beat it for efficiency. ONE handful of pellets every 4-5 minutes... and you can maintain 950F.
It weighs very little, and resides under another grille Doesn't wrench my back to ring it out to use. And - because I have a "few"( ;) ;) ;)) pellets around all of the time...NO worries about gas. At least...not before I eat the pizza..... :o ::) ??? 8)

Oh well, now it's time to make some dang pizza! It'll be here in a couple of days thanks to Amazon Prime! I ordered some Caputo "OO" while I was at it. Pizza this weekend is in the forecast! (Maybe Sooner!)

Well congrats!

And when you have questions we will be here to help. There is a little bit of a learning curve but with your cooking prowess I am sure your first pie will be perfect!

And remember corn meal is your friend for getting those pies to slide off the peel.

Also when it comes to toppings less is better. No need to pile on. It adds weight and the top will get burned as the middle is undercooked.

It's good to know I have backup. I am glad you have faith in me but I am fairly sure that I am quite capable of messing up, lol. As for cornmeal, I've heard that semolina works best but I found out it's not exactly cheap so cornmeal it is :)

I'm with you on the light toppings deal. The Keg is somewhat the same way but I cook at somewhere in the 600° to 650° range on the Keg, sometimes even a little lower. At 800°+ it needs to be even lighter. I have been reading a book on pizzas and pizza making, we'll see if I can translate that into making a great Uuni pizza!

It seems that I have over the years become a BBQ Consumer's reporter, lol. I'll letcha know my thoughts on it as soon as I get a pie out of it. My wife always gets on to me for "believing the hype" and buying things. She says that I am impressionable. Maybe. May be not. If I were impressionable I would never sell any grill if I didn't like it. I sold 2, including the PBC (which most folks rave about). If anything it proves that taste is subjective. As you'll learn, forums get expensive, lol. These guys have all of these nice grills and smokers and it plants the seed when you see them and the food they make on them, lol.

I think my first order of business is to see if I can improve upon THIS (http://www.letstalkbbq.com/index.php?topic=17108.msg226713#msg226713)

How big a pie were you making on your Keg RG?. I think these new small grills limit the size. my gasser is just 12 to 14 inches.

I could make a Large (15"-16") but most of the time I would make a medium (12") or smaller (10") ones. One of my favorites was this little brisket pizza  (http://www.letstalkbbq.com/index.php?topic=17062.msg226234#msg226234).

RG, you're gonna love that Uuni. I remember a couple of years ago, Art(ACW3) and Bradley (Dee's SinL) both brought their Uuni's to the Fall Gathering in Augusta. They were churning out pizza's faster than we could eat them. All I can remember, after eating more than I could handle, was that I wanted some more. They were that good. Just the right amount of smokiness and big flavor out the wazoo. Tommy (TMB), as he is prone to do, even tried to modify one of the ovens to cook even better. I think I've got a little video of these Uuni's in action. It starts at about 15:30.

My better half is either pretending she doesn't know that I ordered it OR she really doesn't know yet. I suspect I'll be getting a phone call once it's delivered :P

I believe you made a good choice if you want Neopolitan pizza. To cook you need very hot temperatures & the top of the oven hottest, otherwise the bottom burns before toppings cooked. The only affordable options are the unni & the blackstone. Wood fired out of my price range.

Yes it does. It is all about temp control. Learning the oven. There is a learning curve but once you learn how to cook your pie how you like it you will be happy.

I don't like burned bread but there are some great CT pizzas with a black bottom that tastes great....I can't explain it but if done right :D :D :D :D

I like thin medium & thick crust pizza if done right....A great pizza is great be it thick or thin. I am just not crazy about most Greek pizza in our area. Even though the pest pizza in our town is Greek ??? ??? ???

Well guys and gals, it has landed! I just put it together (took like 5 minutes). Initial impressions is that it is very well made. I was able to keep the secret from Steph (not that I tried, but I didn't offer up any info either, lol). She could've read this thread or looked at the order history on Amazon but alas, she didn't. The package arrived via USPS and I happened to be home when the mail man rang the bell and placed the box by front door. She said "What is THAT? It better not be a GRILL!" :P

I told her that it wasn't. I didn't lie! I brought the box in, opened it up and she saw the words PIZZA OVEN and said "Pizza Oven??" and rolled her eyes, lol. She said "We've got 3 pizza ovens out there" referring to the Kegs.

So, the cat's out of the bag. I need to make some dough and get it fired up and see if it can earn her seal of approval. Stay tuned!

Eh...she knows me. It's all good. Same as the KBQ, she always thinks things cost too much. I asked her what she thinks I paid, she said "Too much, probably $200" :P

In the case of the KBQ, I do agree that it's a little pricey, would like to see it somewhere around $600.00 to $800.00 (very doable I think) but it is what it is and it costs what it costs. Nobody bent my arm and made me buy it. Same with the Uuni. Something is worth what somebody is willing to pay for it. I have a sneaking suspicion that the Uuni will prove itself. At least that's the hope!

While on the subject of the Uuni, I noticed it does not have a fan. Was that just on the original Uuni?

Congrats to RG on his purchase!  I have now researched and watched most of the videos on the Uuni2 and it is impressive, however is there really $300.00 there? What am I missing? Amazon just sent me a deal on the Blackstone  for $288.00 there appears to be a lot more cooker there for buck. Is it because of the stainless? Educate me please... :)

I was looking at the blackstone as well. I am sure it makes great pizza but I wanted wood fired vs gas so I chose the Uuni. As for is it worth $300? I think so being that it uses no electricity unlike the blackstone so it is portable. I do like that the blackstone has a rotating pizza stone but the longevity of that worries me. The blackstone also lets you make bigger pies but we mostly make 12 inch pizzas here as we all like different things. I don't think you can go wrong either way.

Thanks RG! I agree on the portability and it's easier to store so that could be a deciding factor for some. I've had pizza both ways wood fired and gas fired and I really could not tell the difference so for me it's going the Blackstone especially here in the Midwest it will be easier to use during the winter months. As far it rotating they have made improvements with the bearings on the version 2 and I believe it is rectified.  Just got to pull the trigger !  :)

Jason, are you planning to bring the Uuni to the Cookout with Bremer in a couple of weeks?
Pizza would be a nice way for us to get our veggies.
Oh, please bring your wife if she is speaking to you.

just to add a note here..I know the new ones don't have a fan, but Muebe rigged me up with a pack that runs on batteries for my original Uuni..I really like battery packs..and on my Cobb grill..Old Dave fixed me an extender kit with a rotisserie that run on a battery pack also..very handy and runs about 36 hours at a time on a set of batteries. Enjoy your Uuni..I know you will, most excellent pizza.   Just sayin.   .☆´¯`•.¸¸. ི♥ྀ.

Tom,

My BlackStone makes the best pizza I have ever been able to make.
It makes a great calzone also. It can make everything from Neapolitan to deep dish to near perfection.
Neapolitan 80-90 seconds, thin crusts in 2 1/2 minutes, New York & American style in 3 -5 minutes.
If you like the leoparding on the pizza crust, you will love the BlackStone.

Not knocking the Uuni. I'm sure it makes great pizza also.
just sayin.....

I don't ever knock other grills and I like that about this forum. We can all talk about what we prefer without stepping on toes. I like that it stays respectful here! That's a rarity this day and age. As for the Blackstone, it looks real nice. Maybe I should get one of those too! ;) :P

If you don't hear from me for a while, you'll know that I bought it, the wife flipped and I am MIA!!! LOL!!

Jack, I don't know if I'll be coming or not. I WANT to but I don't know if I will be ABLE to. If I am able to come, the UUNI and KBQ would be good traveling companions. I'll try to give a heads up as soon as I know one way or the other, I hate pushing it to the deadline but that's likely how it will play out.

Welp, got some dough balls proofing, about to make some sauce. Looks like pizza for lunch tomorrow. Steph wants to do a Uuni vs. Keg pizza battle. Why not? If the Keg wins, you know I'll never hear the end of it, lol.

Just make sure the best pizza comes from the Uuni. All the time talking up the Uuni for ease of use, clean up, etc. Then after that you can use whichever one you want.
I could be wrong, but I'll bet the Uuni will be the go to.

Might want to get a few Uuni pizzas under your belt before an official challenge. It took me a few pies to get it the way I like it. The height adjustment on the pellet stack controls the temp and the amount of pellets you start with has an effect also. Your first pies might not come out the best. You know your Kegs well....

Yes...the Uuni uses WOOD...and that added touch of wood oven flavor is a great touch ;)

As of now, no regrets though. Hopefully it stays that way. Pizza making time today, time to see what this little cooker can do.

Pam, I have no rhyme or reason for half the stuff I buy. If I'm intrigued by it, I stew on it for a while and think about it and 80% of the time I end up buying it if I still want it after said period of time. The KBQ for example, I first saw it 2 years ago. I liked it but didn't buy it on impulse. My Wife thinks I did, she says that I am very impressionable, lol. Partially true. The UUNI I saw maybe a year ago and thought it was nifty. I didn't buy it then, actually forgot about it for the most part. About 6 months ago, I started reading more about it, read Mike's post from back to front (I'm weird like that sometimes). I read his and your comments on it, made the decision to look harder into the purchase of one and just like with the KBQ, we see where it got me, lol. It was a much easier pill to swallow than the KBQ though, much cheaper!

I am going to make a prediction right here and now. I will make pizzas on it today, Steph will eat it and say one of two things to me. The first being "It's no better than Kegged pizzas, you wasted $300.00"

The second thing she may say is "It's better but not better enough to have spent $300.00!" or some variant of that such as "It's better than the Keg but not $300.00 better"

I hope I am wrong, but I know how she thinks. She's as stubborn as a damned mule and will not give me the satisfaction of admitting that I am right. It's a tale as old as time. That's how it works with married couples, lol. The same can be said for her Jeep that she's got. I don't think it's worth what we paid for it but that's what it took to buy it and "restore" it. It's rare that we both see something as having the same amount of value but we accept it and move on. We've been doing it now for (dating included) 26-27 years now. It's a give and take. She's a good girl, wouldn't be what I am without her!

Either way, the report will be soon coming. I don't even know if I am going to fire up the keg. I may just cook'em all on the UUNI. I have 5 little bitty dough balls and will make 5 itty bitty pizzas. I imagine the first 1 or 3 will be not as pretty as the last ones. I expect to torch some :P

After my UUNI experiment, I am looking forward to seeing what damage Tom can do with that Blackstone! I am excited for him!

Fun times ahead for all, pizza for everyone!! Woo Hoo!!

Pam, not sure what you mean by agree to disagree here. I agreed with you, lol! Not sure how you interpreted what I typed to mean otherwise. I agree that it's a good thing we all like what we like and don't judge people by what they buy or don't buy and that we are all okay with that. I just blabbed on about MY mindset when it comes to buying things, how I rationalize my purchases. If you took that in a negative way, then I apologize. I have a background on another forum of people being intolerant so that's the FURTHEST thing from my intent here. I am here to make friends, not enemies :)

As for the pizzas, I am sure they cook at warp speed and I am afraid I'll be taking that door off probably TOO much worrying about it and trying to rotate it excessively, lol. Gotta start somewhere though!

You're absolutely right, Pam.

Nobody admonishes another member for the choices he (or she):P :P makes.
Whether it be the food they like, the way they prepare it, or what they use to prepare it.
It is all about sharing information, and ideas.

I can tell you I don't like a dish you prepared without telling you that you are wrong for preparing it.
You can tell me you prefer a certain cooking appliance to the one I use without telling me I am an idiot for preferring mine.
If we all preferred vanilla it would be a very boring world.
If everyone of us used the same grill  & prepared everything the same way,we wouldn't have anything to talk about.

I know some families that could take some lessons from us.

RG I rotate my pies 1/4 turn every 30 seconds. I let the pie sit for 1 minute to set before starting the rotaion. A thin crust will get done in like 4 minutes. You get nice even browning this way.

The stone takes a little longer to warm up then the baking steel but has better heat retention. The more you cook on it the better your results will be.

Honestly my first pies did not fare that well.

As LostArrow suggested to RG, go to Pizzamaking.com. Plenty of recipes and info there.
Lots of nice people to give you all the help you need.
A simple all purpose pizza dough is best to start with, and then experiment with other formulas until you find the ones that you really like.
I have about 4 or 5 that I use on a regular basis.
