Two Saturdays ago Mr. and Mrs. Tee came to watch the Vol/A&M football game with us. I fired up the Uuni for some homemade pizza. It was extremely windy outside and I had some serious “fire management” issues. It took a long time to get the unit hot enough to cook a pizza. In the end, all worked out. I wanted to try something different on a pizza. I just happened to have a couple of nice cold-water lobster tails in the freezer. Out they came. Thawed and chopped up before putting them in melted butters to partially cook the meat. I used the “gravy” I created to baste the pizza crust before adding the chopped lobster, some basil and feta cheese.
Here is a before shot.

One last pizza. Anchovies, mushrooms and fresh mozzarella.

They were all really good. I am, however, going to be adding several upgrades to my Uuni 2. The pizza stone and the fire management tube. I saw what RG’s looks like and that is all it took. Whenever they get them back in stock, I will be ordering it.

Art I bought the stone and I had to cut mine with a tile saw to fit. My Uuni 2 was the first release model so it is a little bit smaller inside.
I have been waiting for the fire management tube adjustment to come back into stock so I can order it.

Yes, but not until the next morning. The nice thing about having Mrs. Tee there, when she says it's time to go, she is not fooling around!!

I still find it too risky. A neutral third party site is more my comfort zone

It tasted even better than it looked. I think the butter/lobster combination brushed on the dough made the difference. The feta cheese helped to cut the richness of the lobster, a little.

I'm kinda stuck in a rut (pepperoni, sausage, mushrooms, etc.)
No imagination.
That lobster pizza does look great though. Maybe it's time for me to get out of my comfort zone.

I haven't graduated from Cheese, Pepperoni and Mushroom! Still a Newbie with the Blackstone when I get the whole thing more dialed in then it will be time to experiment. First i want to try making tator tots and searing a steak on cast iron in it. :)

Every time I think I will experiment with something exotic, I think how good that ol pepperoni, sausage, and mushroom pizza really is. V has finally got me to always make her a white pizza in the mix.

Art, a local restaurant here makes a lobster pizza with a mustard cream sauce. The crust is a large flour tortilla. I thought the combination of lobster and a mustard cream sauce sounded odd but it is delicious.
