This is not something I usually see so I had to grab em. They look good and beefy. I'm assuming there's a membrane I need to remove then I'm gonna dry brine then tomorrow evening for either the PBC or the Performer/SNS Tuesday. Was figuring I'd do them with BIg Bad Beef Rub until butter tender no crutch. Any other delicious, crazy ideas out there? I'm always looking to do something new. Wings on the Vortex this evening.
