Title: Smoker Noob from Cali

I just bought my first smoker, the Red Tec (the big one).  I have been wanting a smoker for some time and kept going back and forth between what type of smoker I wanted and which make.  I finally pulled the trigger and am looking to learn as much as possible about it.

Please excuse any dumb questions I may ask!
