Title: Sous Vide Fried Chicken

V has been asking me to prepare my world famous fried chicken for her. (her term, not mine ;D)

So... Last night I made fried chicken, but pulled a bait & switch on her.

I cut three large breasts into steaks, seasoned with sea salt & black pepper, then put them in the hot tub for eighty minutes @ 155°.
After salting the steaks again I triple dredged them in self rising flour which I had seasoned with soul food seasoning & buttermilk.
I let them rest for about fifteen minutes while I heated the deep fryer and prepared mashed potatoes & bacon fried corn.

The chicken steaks were deep fried to a golden brown (about three minutes @ 390°.)

This is the portion we had for dinner. We had the same amount left over.

It was very moist & tender. V said it was at least as good as my usual recipe.
