Title: Bacon Jerky??

So I'm obsessed with bacon jerky right now. Wondering how I can make it on my pellet smoker. My smoker (Memphis Elite) will do 180 degrees pretty consistently (170-190). All the successful jerky cooks I've done have been super-lean meat...

Here's a pic of what I'm after, basically.

Anyone done this before?
