Title: Canadian Thanks Giving This Week End How About Turkey?

So first off Happy Thanks giving to all my fellow Canadians.

I did some research on sous vide a turkey. From what I can tell you basically have to de-bone most of it into sections and cook it at different temps. Dark meat Vs White Meat temps. Many videos out there explaining how to do it and what herbs to use.
Guess I just would like to know has anybody tried it and is it worth it?
