Title: Sirloin Cap Steak

Picked up cap steak at local butcher and decided I would do it in SV. I put the steak in the hot tub at 131 and planned on 3 hours, but the day/evening got away from me and it was in there for 5 1/2 hours. After I removed from hot tub I patted dry steak and seared on SRG. I reserved liquid and heated up slightly and strained, then drizzled over cut up steak. We had it with some rosemary/garlic potatoes. It was very good and tender.
