Decided to treat myself so I bought some waygu short ribs from Snake River. It included 3 large ribs. Not wanting to take a chance and screw up the whole batch, I cut one off and cooked it by itself.
Here is picture of it trimmed - you can see the marbling.

Add a simple rub of salt and pepper.

Results- as it was getting done, I did the probe test. At 190* it went thru like butter. I had read I should take it to about 200*. I panicked and thought it would get dried out or something before it reached that temp. I should have waited as not enough of the fat rendered and the meat, while tender, had a fatty taste So I consider this a miss.
The next cook I did the other two. I'll skip the trimmimg and rub photos. Here they are on the smoker. You can see that they are very meaty.

All done. This time I took it to the higher temperature.

Result- a hit! Although this piece looks like it has a large fat strip , it wasn't that much and the other had hardly any. The meat was melt in you mouth tender. I will do this again even though it was $125 for the ribs. They were very meaty and could easily make 3 meals with sides.
