Its what's for dinner.
I hadn't had one for quite a while, & they are getting hard to find in diners.
So I had my butcher order me some.
(I guess most butchers don't even save them anymore.)
I had to buy a case (12 one pound tubs). I thawed a tub out yesterday, threw them on the Blackstone, and had myself a great dinner.
A bit of CYM on the bun & a kosher pickle on the side and I'm good to go.

Yes I fried it on the flat top.
I scrambled the rest of it in butter today to put in scrambled eggs. (or maybe to just eat with saltine crackers.) ;)

It looks just like you see in the friendly doctors office. very mushy.
Or in a Frankenstein movie. :D
Next tub I open I will take a picture & post it.

I've had pork brains scrambled with eggs, but never but just fried by itself.
We can find 'em down here in the sunny South in a little can like Vienna Sausages.

That brought back a funny memory. I worked at Winn-Dixie grocery store as a teenager bagging groceries and stocking shelves. One day I was kneeling on the floor stocking a lower shelf when a woman came up to me and asked "Excuse me...but do you have any brains?" A bit taken back I looked up at her and said "Well I'm smart enough to get out of the rain!" She looked at me strange for a moment until we both figured out what the other was saying. We both got a good laugh that day.
And yes, I did have brains just one aisle over. :)
