Title: Helpful Holiday oven tip

Yeah yeah, The Smoke uses an oven once in a while

Helpful oven cooking tip:

Lets say you are going to cook your turkey at 350 degrees

Pre-heat your oven to 450 degrees then place your turkey in the oven

turn the oven down to your desired temp of 350

ANY temp just pre-heat 100 degrees higher first

Why?????

because when a 12 lb or higher lb mass of cold meat goes into the oven, the oven temperature drops considerably

If you are pre heated to your desired temp the temps will plummet when the cold turkey is placed in the oven.

Thanks for the tip , Im dry brined and injected . Just debating whether oven or pit boss.
trying to get the most moist breast .

Good tip!
I actually do and did mine starting Wednesday night about 10:00 pm. Started out at 500 degrees and slow roasted after the turkey is placed in the oven and left at 500 for 20-25 minutes them temperature is lowered to 225 for a slow roast overnight.

Almost exactly what we do (ours is 500o for 15 minutes, then 200o til done). Perfect every time!

Thanks Smoke it worked out great 450 going in & then lowered to 350 came out good right on time

Makes sense!  Read the tip too late to try this time but once we decide what to chomp on for Christmas I may get another chance.

Your post made the think -- I honestly cannot remember the last time (until Thursday) that I roasted a turkey in the oven.  Our turkey has been done in some outdoor device (Memphis, Traeger or PBC) every year for at least a dozen if not more years.  Frees up the oven for other stuff on an easy schedule.  Since there were only three of us this year I just did a breast and some miscellaneous pieces in a roasting bag in the oven.  Best part was the aroma in the house   :).  No shame in that.

Smoke, do you think that's a workable idea for a pit, like a pellet pit or stickburner?

"Overnight"?  When do you think it's at serving temperature?

Using the 500/200 method a 14 lb bird usually takes between 9 & 10 hours. I put mine in at 6AM and took it out just before 4PM to rest (while the dressing went in to bake) - ate at 5PM.

Preheat 1oo* higher and reset it when I open it a put the meat in...

10 hours to cook & 20 minutes to eat .....& it is worth it lol

Great tip!
Actually, I use that method (to varying degrees) on all my cookers.
I learned that when I started getting serious about cooking outside, as I started on a Bradley.  ;) ;)
