Had the day off so spares sounded good!
Started with three full racks of St. Louis spares...

Removed the silver skin, trimmed some fat and divided them in half...

So here is my opinion
1st was the M-3 WOW combo. You guys are right what a great flavor combo.
2nd was the BP Jalapeño rub. Great bacon and spice flavor.
3rd was Zach's. Just a great sweet rub.
4th was Super Pig. Really good and maybe just a hint of salt is needed for next time.
5th was 53rd Galena. Interesting flavor. Very good.
6th was Lucille's. Flavor was good but too much salt.
The ribs were tender but had a nice tug to them. Not a clean pull from the bone but very good. Great charcoal flavor profile and very moist. PBC hits a home run again :)

I prefer my ribs pellet cooked. The PBC ribs are very good and so are the SRG made ribs but IMHO the ribs I make in my Memphis are the best.
There is a nice charcoal flavor that you get from the PBC that the SRG and the Memohis cannot supply. The PBC is my goto chicken cooker however making the best flavor chicken of those three.
I like to spread my cooking over different cookers and as they say variety is the spice of life. I am not a person who is dedicated to one cooker but can appreciate all the different things each one can do. Some excel in one area and some in others.
I even like to sear a steak in my pizza oven sometimes ;)

That's exactly the reason I use to justify all my cookers. ;)
