So I had some leftover duck. I'm going to wing it and make duck enchiladas.
First, fresh corn tortillas
Shred the duck, roll in queso and a little red enchilada sauce (homemade). I'll share it with you when I'm done tweaking it.
Bake for 20 minutes
Let it rest
Make black bean and corn salad
Plate, wash it down with modelo
