I have been champing at the bit to try my U2 again since I saw muebe’s advice on setting up the pellet feed tube. I also wanted to try a pizza dough recipe from Bobby Flay that looked interesting. Here is the link.

I made the same pizza as the first one (sauce, onion, black olives, mushrooms, and cheese). Besides the change of crust, I didn’t “load” the pizza like last time. Need to watch the pizza more closely next time. There was one slightly overdone side of the pizza. Even it tasted really good.
The second pizza was done with an olive oil brushing with some onions, black olives, mushrooms, and cheese. I also had one slightly overdone side. It too tasted pretty good. Had that “wood fired” taste.
I need to make one more adjustment to the feed tube. I loved my results tonight. It may be time to branch out to other things to be cooked on the U2.
