The other day I saw a bunch of stuff pork cooks and wanted to make some myself.  Crazy day at work made me lazy and I had some nice spinach and good rolls, so I switched the game plan to make a pork cutlet sandwich.  Nothing like a great roll, personally I think it is a deal breaker on a sandwich being great, good or okay.

I pounded the pork loin to make it thin, and seasoned with smoked sea salt and black pepper and let rest for an hour or so while I got myself organized.  Breaded the pork (standard Italian bread crumbs with grated parm cheese added) and put it in my CI with just some butter to get a good sear/crispy crust on the bread crumbs.  Once I flipped the pork I added the spinach to cook down with some garlic, can never have too much garlic.  I cut open the roll put some regular provolone cheese, sharp would have been better but regular I always have on hand, put the pork followed by the spinach and it was dinner time.  Washed down with some Allagash and that was all she wrote.

I could not agree with you more on the bread!  That is a great looking sandwich - It looks incredible - I wish I were eating that for lunch instead of the salad I am working on!  Nice job!

I would have to agree. I would love to get your results and talking about the butter and CI pans really helps. I could not agree more on the buns, it makes or breaks a meal.
