So I went to Restaurant Depot today

Came home with this bad boy. I paid $3.39 a pound for superior Angus beef. I figure I buy chuck roasts at Costco for $4.99 per pound, I'll try my hand at being a butcher.

I'm watching videos on how to break this down. Would really like to learn this skill.

Every now and then I pick one of these up. I cut them into some nice chuck roasts, chuck steaks and some stew meat. Also, ground some up for homemade beef hot dogs.
Why couldn't Noah have swatted the 2 mosquitoes?.

I've gotten several of those(not all at one time). After trimming major fat away I stuff it witha bunch of garlic toes, season well with salt and black pepper and sometimes other stuff and stick it in the oven to roast and then braise and it comes out deliciously tender and awesome. Thicken the gravy up a bit and drizzle over the meat on a good French bread for poboys. Mmmmmm.........

Something else to look out for there is hanger steaks. Bulk packed with about 5 or 6 but pretty darn good price on them. I haven't seen them every time I go though.

Verdict. I think I did ok for my first time. Cutting chuck steaks and roasts is pretty straight forward. I think I screwed up the delmonico steaks from the chuck end. I guess that makes for more stew meat as we head into summer. :(

Great butchering job, all I've ever done with them is grind my own burger meat. Now I'll have to give this a try.
