For the last 3 months I have been neck deep and almost drowning in a hardware and software upgrade here at work. There is finally some light at the end of the tunnel and this weekend I managed to stay home both days...
Since my last post on this I ordered an OnlyFire heavy duty motor because I got tired of watching my chickens swing back and forth. The stock motor is just too light for me.
I had to modify the mount just a bit as it was about 1/16th inch to wide for the motor mount. With that done easily I got it all back together and rolled the first bird.
Much better! this motor didn't even strain a little.
I also ordered a slow and sear a while back which I have been using and love. These together on the kettle is a winning combo for sure.
I had to train myself to back off on the smoke with the extension ring on. This is fine since it saves wood and charcoal, its just an adjustment. One or two chunks wood with Kingsford Hickory charcoal is plenty. Its more of an Aaron Franklin style than typical slow smoking. with the open holes for the spit I have found it better to use a little less charcoal and open the vent more so it can move on through .
