There's not many healthy St Patrick's Day recipes out there, but this one is not only heart healthy, but darn tasty to boot! It comes from the EatingWell site. I put it together after my cardiac-rehab class.

And in making the roux it called for 3 slices of bacon, I used one thigh skin cut up to render a little fat.One last substitution was instead of salt I used Mrs Dash lemon pepper. Other than that followed the recipe. It was wonderful and will make this again!
