I just joined and glad to be a part of this forum. I have been smoking in earnest for 3 years now. I was once a cook in a restaurant in my younger years and was a long time "griller". Always loved real BBQ so I decided to start doing it myself. Like most of my interests, I tend to go whole hog. So here I am 3 years later with 4 smokers, 20lbs heavier and higher cholesterol (its not that bad actually-good genes). I love all things BBQ but I have a particular passion for brisket. I live in the greater Houston area and as anyone who lives in Texas can attest to, they grow on trees around here. They are literally cheaper than ground meat. Like $1.49/lb cheap. So needless to say I have done a lot of briskets.
I look forward to learning a lot and getting to know some nice folks.
