Cauliflower is a blank flavor canvas.
I prefer not to get full on fillers so I stick to protein and fat. But I have made faux risotto and faux mash from cauliflower. You need to season it heavily otherwise, on its own, cauliflower tastes like a used mop. (NoI haven't tasted a used mop HAHAHAHA)
For me, veggies are just fat transporters. I'll mash a little cauliflower and load it with kerrygold butter and some real Parmesan cheese. Oh it tastes really really really good.
