Time for a quick sear, about 1' 30" /side in a VERY HOT CI skillet.
And with those good cracklins from the sear and those wonderful juices from the SV, well........ you just have to make some
GRAVY With scalloped potatoes and fresh corn, .... and of course a glass of wine.
