I made some killer pot roast yesterday, tried a weird recipe my wife stumbled on and added my touches to it. It made plenty so I saved the leftovers and decided that I'd make myself a "sangwich" for lunch today. I took a challah burger bun and toasted it, added some melted colby jack and topped it with the pot roast and veggies and the top bun got a little slather of A1 Smoky Black Pepper Sauce. It was juicy like an Italian Beef, it was EXCELLENT!

Now, if you have good vision, you'll see an unfamiliar item on there. A pepperoncini! Sounds odd but trust me, it works!
I don't have a link to the recipe but it goes something like this (including my additions).
4 pound chuck roast (mine was just shy)
1 pack of Ranch seasoning (used to make dressing, just the plain kind, not buttermilk)
1 pack of Au Jus Gravy mix (I used McCormick)
1/2 stick of butter
10 whole pepperoncinis from a jar (cut the stem end off)
1 whole onion cut as big or small as you like
2 celery stalks, peeled and chopped to the size you like
2 carrot sticks peeled and chopped to the size you like
medium container of sliced fresh mushrooms
Put roast in crock pot, sprinkle both packet seasonings over it, throw veggies in pot with the butter and cook on low setting for 8 hours. It needs no water believe it or not. It will sweat down the veggies and it will produce more than enough liquid as it cooks. Check on it every hour after it cooks for about 4-5 hours, that way you can move the veggies around and make sure they stay submerged so they'll soak up that broth and get tender. Feel free to add or omit things you like/don't like. I would've added potatoes but since I made mashed potatoes and gravy, I felt it would've been overkill.
It all sounds funky, Ranch, pepperoncini peppers, but it is excellent! Best pot roast I've ever had! The best part is that it cooked while I tended to other things. I sometimes forget what a wonderful tool the crock pot is.
