We never had Spam growing up, but we would have this on a regular basis though:
I wasn't really a fan, but then again, I was a growing boy, my mom is really good cook, and I would chow down on anything that came out of her kitchen.
Based on all this talk, on my way home, I stopped at Wally World and picked up a couple of bricks. I bought one with jalapenos, to have with some left over red beans and rice, the other with bacon to try with some eggs.
So I sliced up the the jalapeno loaf into six planks and they went into the CI along with the leftover rice to crisp up. I did get a good crust on the Spam, and it smelled great while cooking. Plated up and ready to go, I guess what surprised me the most was the texture. Like I said, I got a good crust on them, but the insides were, for lack of better term, kinda mushy. I think I was expecting something a little, chunkier, maybe? Also, I was a little surprised at the overall mild flavor. Sure, I got the peppers, but overall it did not come through as the "spiced ham" that some feel is the origination of the name.
I'm not saying that I wouldn't eat it again, but I did go for the Canadian Bacon with my eggs this morning ! ! !
