Sous Vide Ribs

I tried the serious eats sous vide ribs. The ribs were very tender but had just the right pull. I had to finish them in the oven since it was nothing but rain. I will not add sauce next time and serve it on the side. I think finishing them on the grill would have been better and would have gotten some color and char. But overall they were pretty good ribs.

Great looking ribs Ray! I took a package of the Zaycon bacon and sous vide them the other day for 27 hours. It came out fantastic after browning.

Out of the country at the moment so I'm a little late to the party but wanted to add my 2 cents. I use Kenji's method a lot so I (almost) always have servings (4 ribs or so each) in the freezer to finish when I want ribs and don't have 6 hours to make them.

As you surmised, they're good either way but better finished on the grill. You can get bark/char in the oven but you need the grill and some wood/pellets to add a bit of "outdoor" flavor.

I prefer the dry version but have to make some sauced for SWMBO. I hear they're good that way and will take her word for it.

I did a second batch the other day. This time I went 152 for 24 hours and was able to finish on the kettle using the SnS. Getting real close to the texture I prefer. Next time I will back off on the amount of time they spend in the bath, maybe go 12 hours.

Did them 152 for 12 hours this time. Once done smoked for 20 minutes and moved over direct heat to get some color. No sauce this time. About the best ribs I've had in long time.
