Maple Smoked Pork Butt Roast

Try using cookinpellets.com Premium 100% Sweet Maple wood pellets in your MAK 2 Star when smoking your next Pork Butt Roast. You should try smoking/roasting a Pork Butt to an internal temperature of 187ºF. Why 187ºF you ask? Because it's the magical internal temperature for carving a Pork Butt. At 205ºF it does not lend itself anymore to being sliced - But at 187ºF the fat has started to render and it's not only perfect for slicing against the grain but the juicy results are exquisite.

I smoked it at 225ºF for 2 hours and then cranked it up to 350ºF until the internal temperature reached 160ºF. Covered the foil pan with foil (leaving the meat probe attached) and cooked it till the internal temp reached the magical 187ºF. Rested the roast for 15 minutes before slicing ...  8)

I'm starting to like using a foil pan lately to keep the grill clean. For me there is nothing worse than a dirty grill!

My neighbor next door always cooks to about 185* and slices the butts he cooks.  He said, "you ought to try it, Jack, slicing is better than pulling."  But I kept on pulling because...

He didn't have pictures like THIS...

That has been my preference for sometime now as my wife often felt the pulled was too mushy. I think that the sliced gives you more flavor. I will have too look into the 100% Maple Pellets. Nice cook!

I've been smoking to 165°  when I plan on slicing, but I will definitely try the higher temp.

Love the color from those maple pellets!  I've always liked sliced pork butt better than pulled ... glad to see I'm not an outlier.
